This recipe came from my mom, and I’m not sure where she got it from, so I can’t give it the proper recognition, but just know that it didn’t come from me.
2 lbs. ripe tomatoes (4 medium) core and dice 1/2 inch
1/2 cup extra virgin olive oil
1/3 cup roughly chopped basil or flat leaf parsley (depends on what flavor you like, I like the basil myself)
1 Tbs. corsely chopped fresh thyme
1 Tbs. minced garlic
1 tsp. salt (kosher)
1/4 tsp. freshly ground black pepper
combine ingredients in lg. bowl and mix well. Let sit for at least 30 mins. and up to 3 hours at room temp.
Toss with warm pasta! YUM!
