-several lg. whole roasted chiles of your choice, (Hatch’s makes some good ones, you can also buy fresh roasted ones at your local fruit/veggie stand at the end of the summer)
-one egg, beaten
-shredded cheese of your choice
-cornmeal
Coat the chile with egg, then stuff each of your whole chiles with shredded cheese till it’s full, but not bursting, then coat with cornmeal. Fry it up in a frying pan over medium heat with a little bit of oil.
